No-Bake Peanut Butter Buckeyes

There’s a moment every Midwesterner knows — standing in someone’s kitchen, eyeing a tray of chocolate-dipped peanut butter balls, wondering if it would be rude to take a third one. (It wouldn’t. It never is.)

Buckeyes are one of those recipes that don’t need a backstory, because they are the backstory. They show up at every holiday cookie exchange, every school bake sale, every potluck where someone says “just bring something small.” And somehow, no matter how many are on the tray, the tray always ends up empty.

The name comes from the nut of the Ohio buckeye tree — a rich, dark brown seed with a distinctive tan patch on top. Crack open a batch of these and you’ll see exactly why the name stuck. That little circle of exposed peanut butter peeking through the chocolate isn’t just decorative. It’s practically a signature.

We made these on a rainy Saturday afternoon with the whole crew involved. The little ones claimed the rolling station (and ate approximately as much dough as made it onto the tray — we’re counting it as a quality check). The chocolate dipping was a team effort involving toothpicks, debated technique, and a fair amount of dripping. The verdict came in fast: better than store-bought , unanimously and enthusiastically.

That’s the thing about Buckeyes. They seem fancy enough to impress, but they’re honest food — no oven required, no special equipment, just a bowl, a tray, and a little patience while they chill. The peanut butter filling is rich and slightly sweet, the chocolate shell gives a satisfying snap, and together they land somewhere between a Reese’s cup and a proper homemade candy.

Make them for the holidays. Make them for a Tuesday. Make a double batch, because they go fast — and store beautifully in the fridge for up to two weeks, assuming they last that long.

Kids rated these a 10/10. The parents held back a point purely out of self-preservation — these are dangerously addictive. Consider yourself warned.

No-Bake Peanut Butter Buckeyes

Ingredients

  • 1 1/2 cups creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract optional
  • 12 oz semi-sweet chocolate chips for dipping
  • 1 tablespoon coconut oil or shortening to thin chocolate

Instructions

  1. In a large bowl, mix peanut butter, softened butter, vanilla, and powdered sugar until a thick dough forms (start with 3 cups sugar and add more if needed).
  2. Roll into 1-inch balls and place on a parchment-lined tray. Chill for 15–20 minutes.
  3. Melt chocolate chips with coconut oil in the microwave (stir until smooth).
  4. Dip each chilled ball into the chocolate using a toothpick, leaving a small “peanut butter eye” showing on top. Return to tray.
  5. Chill again for 15 minutes until chocolate sets.
